Mozzarella and Potato Bites

Wash the potatoes and boil them in salted water until just tender, about 15 minutes. Do not over-boil — they should hold their shape.

Let the boiled potatoes cool slightly, then slice each one in half lengthwise.

Using a small spoon, scoop out a shallow hollow in the centre of each potato half.

Spread a generous spoonful of homemade tomato sauce into each hollow.

Top with a good handful of grated mozzarella cheese.

Sprinkle chaat masala and a pinch of salt over each puff.

Heat butter in a pan or oven tray. Place the filled potato halves and roast on medium heat (or in an oven at 180°C) for 10–12 minutes until the cheese melts and turns golden.

Garnish with fresh coriander leaves if desired and serve immediately while the cheese is still gooey.
