Suji Halwa

Golden semolina roasted in ghee with sugar, cardamom, and garnished with nuts and raisins. A traditional sweet that takes just 25 minutes and tastes like a warm hug.

Method

    Bring 2.5 cups water to a boil. Add sugar, crushed cardamom, and saffron. Stir until sugar dissolves. Keep warm.

    Heat ghee in a heavy-bottomed pan. Add cashews and almonds; fry for 1 minute until golden. Remove and set aside.

    In the same ghee, add raisins; they puff up in seconds. Remove.

    Add semolina to the ghee and roast on medium-low heat, stirring continuously, for 8-10 minutes until it turns golden and smells nutty.

    Carefully pour the warm sugar water into the roasted semolina. It will splutter, so stand back.

    Stir quickly to prevent lumps. Cook on low heat for 3-4 minutes until water is absorbed.

    Add fried nuts and raisins, mix gently. Serve warm.

  • 3 tbsp ghee

  • 4 green cardamom pods, crushed
  • 2 tbsp mixed nuts (cashews, almonds)

  • A pinch of saffron (optional)
